HOW TO MAKE ME:


Extras required: a quality stock cube, a cup of dry white wine, parmesan, butter, olive oil.


Dissolve stock cube in 1.7ℓ boiling water. Heat a glug (about 4 TBSP) of olive oil and 1 TBSP butter in a suitable size pan. Add my contents and toast me on high, baby, until you hear me sizzle. Phew. Then add a cup of wine and stir until it evaporates.

Turn down the heat and add the hot stock one ladle at a time, stirring until the stock evaporates, before adding the next ladle. IT IS IMPORTANT NOT TO DROWN ME! The stock must be hot and must be added one ladle at a time.

This process will take approximately 20 minutes. I’m done when my rice grains are al dente and I’m firm in consistency.

Take me off the heat and let me rest for a minute (I’m bushed). Add a few knobs of butter and grated parmesan cheese and stir very quickly until I’m creamy.
